Avocado Egg Rolls and Zesty Dipping Sauce

Great pre-dinner finger food! Makes 10-12 egg rolls.

Ingredients:

• 2 avocados, diced

• 2 tbsp. red onion, diced

• ¼ cup sun-dried tomatoes, chopped

• 1 1/2 tsp. garlic, minced

• 2 tbsp. cilantro, chopped

• Juice of 1 lime

• 12 egg roll wrappers

• Vegetable oil, for frying

• 1/3 cup sour cream

• ½ tsp hot sauce

Directions:

Combine diced avocados, red onions, tomatoes, garlic, 1 tbsp. cilantro, lime juice.

Fill egg roll wrappers with avocado mix, fold, and seal with water.

Fry in 2/3-1-inch oil roughly 1 minute per side and transfer to paper towel lined plate to drain.

Mix together sour cream, hot sauce, and 1 tbsp. lime juice.
